{Valentine’s Day} Mint Tea Heart Ice Cubes

I grow mint at home and we always have a never ending supply in our kitchen. Mint is happiest in a sunny spot, with plenty of water and doesn’t like to share it’s soil. It is such a versatile herb, it is great in salads, sweets, drinks and cocktails. I love to make a hot mint tea in winter and a cool refreshing beverage as it warms up. You can sweeten it with sugar syrup, honey, maple syrup or make it with just the mint.

These heart shaped ice cubes add a bit of fun to your Valentine’s Day! I found these ones at Williams & Sonoma, they are made by Tovolo.

Mint Tea Heart Ice Cubes (makes 12, 45ml ice cubes)

Ingredients:

1 large bunch mint (set aside the top ends of the mint for the cubes)

2 1/2 tbsp sugar syrup (honey or maple syrup)

3 cups boiling water

Method:

(1) Clean mint under cold water. Place mint in a glass jug and add the boiling water. Add sugar syrup. Steep for 45 minutes. Drain the liquid and discard the mint. Pour back into jug.

(2) Place 1 mint sprig in each heart ice cube. Pour mint tea mixture into ice cubes. Place in freezer until frozen solid.

To Serve: Place 1 ice cube in each glass. Add 200ml of chilled water. Serve with a straw and add a little sparkle with these Heart and Arrow Swizzle Sticks.
